Blueberry Muffins NEW 2
Ingredients
3/4 cup CSR Golden Demerara Sugar
60g butter, softened
Grated rind of 1 lemon
1 egg
1 1/2 cups plain flour
2 tsps baking powder
1/2 cup mild
200g fresh blueberries
Method
1 : Place CSR Golden Demerara Sugar, butter, lemon rind and egg in a bowl and beat until creamy - approximately 8 minutes.
2 : Stir in sifted dry ingredients and milk, then fold in blueberries.
3 : Spoon mixture evenly into 12 well greased and paper lined muffin pans and bake in a moderately hot oven at 190C
for 30 minutes.
