Banana Chocolate Muffins

Ingredients

200g Butter
100g CSR Brown Sugar
1 Teaspoon Vanilla
2 Eggs
400g Flour
1 Teaspoon Salt
2 Teaspoons Bicarbonate Soda
4 medium ripe bananas - mashed
1 Cup Chocolate Bits

Method

1 : Cream together butter, CSR Brown Sugar and vanilla and eggs, one at a time, until mixture is light and fluffy.
2 : In a separate bowl, sift flour, salt and soda and fold into creamed mixture along with mashed banana and chocolate
bits until just combined. DO NOT over mix.
3 : Spoon into muffin tin and bake for 20 minutes in a moderate oven 180C. Let cool and put into patty paper cups.
