Apple Cup Cakes

Ingredients

3/4 cup CSR Raw Sugar
1 cup wholemeal flour
1 cup flour
4 teaspoons baking powder
2 teaspoons mixed spice
1 egg
1 cup canned apple sauce, stewed apple or apple puree

1/4 cup oil
1/4 cup low fat milk
1/2 cup sultanas

Method

Preheat oven to 180°C. Place 12 paper cases inside the cups of a tray of 12 muffin tins.

Mix all ingredients until just lightly combined. Don’t over mix or the muffins will be quite tough and solid. Spoon mixture into the paper cases.

Bake for 20 – 25 minutes until lightly golden brown. Cool on a wire rack.

Cooking time: 25 minutes
Makes: 12

Ingredients: cane sugar

This natural granulated sugar (golden in colour, and honey like in taste) is mainly used as a sweetener for coffee, or in baking and cooking where it improves the flavour and colour of the end result. It is especially used in recipes for biscuits and cakes made with less processed ingredients like oatmeal and wholemeal flours.
