Pikelets with Sweet and Sour Strawberries
Ingredients

1 cup self raising flour, sifted
2 tablespoons CSR Smart White or Raw Sugar Blend
1/4 teaspoon bicarbonate of soda
1 egg
1 cup low fat milk
1 teaspoon vinegar
15g butter, melted
Method
- Sift flour, CSR Smart and soda into a medium bowl, make a well in the centre.
- Whisk together egg, milk and vinegar and add to dry ingredients until just combined. Allow to rest for 1/4 hour. This allows the lumps to soften in the batter. Mix for 1 minute.
- Lightly grease a non-stick frying pan with melted butter. Add tablespoonfuls of mixture and cook over a medium heat. When bubbles appear, turn the pikelets and cook on the other side. Enjoy topped with sweet and sour strawberries.
Sweet and sour strawberries
1 punnet strawberries, sliced
2 tablespoons lemon juice
1 tablespoon CSR Smart White Sugar Blend
- Combine strawberries, lemon juice and CSR Smart White Sugar Blend. Serve over pikelets.
