Chocolate Meringues
Ingredients

Makes - 22 tiny meringues
1 egg white
1/2 teaspoon white vinegar
1/3 cup CSR Smart White Sugar Blend
2 teaspoons cocoa
1/4 cup flaked coconut
Method
- Preheat oven to 90°C conventional or 70°C fan forced.
- Beat egg white, vinegar and CSR Smart in a small bowl with electric mixer for about 10 minutes or until CSR Smart has dissolved. Fold in cocoa.
- Line an oven tray with baking paper. Place teaspoonfuls of mixture onto oven tray and sprinkle with coconut. Bake for 50 minutes and allow to cool in oven.
Comments
Tip: It is important to whip the egg whites in a small bowl to achieve maximum volume.
