Chocolate Meringues

Ingredients

On the table - 1 hour 10 minutes
Makes - 22 tiny meringues

1 egg white
1/2 teaspoon white vinegar
1/3 cup CSR Smart White Sugar Blend 
2 teaspoons cocoa
1/4 cup flaked coconut

Method

  1. Preheat oven to 90°C conventional or 70°C fan forced. 
  2. Beat egg white, vinegar and CSR Smart in a small bowl with electric mixer for about 10 minutes or until CSR Smart has dissolved. Fold in cocoa.
  3. Line an oven tray with baking paper. Place teaspoonfuls of mixture onto oven tray and sprinkle with coconut. Bake for 50 minutes and allow to cool in oven.

Comments

Tip:  It is important to whip the egg whites in a small bowl to achieve maximum volume.
