CSR Honey Semi Freddo
Ingredients
3 large free range eggs
2 free range egg yolks, extra
1 tablespoon organic honey
230g (1 cup) CSR Organic Sugar
375ml (1½ cups) cream
Method
- Combine eggs, extra yolks, honey and CSR Organic Sugar in a heatproof bowl. Place over a saucepan of simmering water and whisk for 5 minutes or until frothy. The heat helps to increase the volume of the whipped mixture.
- Remove from heat and beat for 5 minutes with an electric mixer until thick and pale.
- Beat cream in separate bowl with an electric mixer until soft peaks form. Gently fold through egg mixture.
- Line a 26cm x 10cm loaf pan with plastic wrap. Pour in Semi Freddo. Cover with foil and freeze overnight. Enjoy as a easy mid week dessert with fresh fruit or serve on a platter for a dinner party.
Note: If organic ingredients are not available, the recipe can still be made with non organic ingredients.
