Banana, Raisin & Oatmeal Hotcakes
1 cup rolled oats
1 cup plain flour
¼ cup CSR Brown Sugar, firmly packed
2 tsps baking powder
½ tsp baking soda
½ tsp cinnamon
¾ cup plain natural yoghurt
¾ cup milk
1 tsp vanilla
2 ripe bananas, mashed
1 cup raisins
50g butter, melted
Oil and a little extra melted butter for cooking
CSR Golden Syrup Squeeze, for serving
1. Place all ingredients in a food processor and run machine until the mixture is blended and just smooth. Don’t over process and chop all the raisins up. Pour into a jug.
2. Heat a non-stick frypan over medium heat. Brush the surface with a mixture of oil and melted butter and cook hotcakes, 2 or 3 at a time, until bubbles appear on the surface and the bottoms are golden brown.
3. Turnover and cook for 2 mins on the other side. Serve in a stack with a golden syrup poured over the top.
